Recipe: Creative scones made easy

Scones are delicious, easy to make and fun to make with the kids. Traditionally, scones are served warm with jam and cream, but there are a number of ways you can make scones.

You can add fruit or vegetables to scone recipes to make them more interesting, just like you would with muffin recipes. Here are some easy methods to make your traditional-scone recipe more creative.

INGREDIENTS
55 g butter
225 g self-raising flour
a pinch of salt
25 g caster sugar
150 ml milk

TO MAKE
Firstly heat the oven to 220C. Next, mix together the salt, flour and butter with your fingertips. Stir in the caster sugar and then the milk until you get a soft dough. Turn the dough onto a floured work area and knead lightly. Pat the mixture so that it’s a 2 cm thickness.

Using a 5 cm cutter, stamp out the rounds and place them on a lightly greased baking sheet. Knead together the rest of the dough and stamp out more scones to use up all of the mix. Brush the tops of the scones with some milk. Bake for 12–15 minutes or until golden.

Here are some ways to make this recipe more creative:

  • Combine one cup of chopped bananas to the mixture to make banana scones.
  • Mix through one cup of mashed pumpkin to the mixture to make pumpkin scones.
  • Stir through raisins and dried apricot for a fruity scone.
  • For a savoury scone mix through feta, finely chopped sundried tomato, chopped olives and chopped basil.

    Haven’t tried recipe yet, but noticed when I printed it out the font is tiny so will be hard to follow when cooking.
