Sweetcorn fritters with roast tomato & bacon

Corn off the cob is essential to give texture and a fresh edge to these fritters.

They’re also delicious served with fresh avocado salsa, or in mini form, as a base for smoked salmon and creme fraiche, to be enjoyed with drinks.

INGREDIENTS
1 cup plain (all-purpose) flour
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon paprika
1 tablespoon sugar
2 eggs
1/2 cup milk
2 cups fresh corn kernels, cutfrom the cob
1/2 cup diced redcapsicum
1/2 cup sliced springonions
1/4 cup chopped coriander andparsley (mixed)
4 tablespoons vegetable oil

To Serve
8 halves roast tomatoes
1 bunch rocket,washed and dried
4 rashers grilled bacon
olive oil

TO MAKE
Sift flour, baking powder, salt and paprika into a large bowl, stir in sugar and make a well in the centre. In a separate bowl, combine eggs and milk. Gradually add the egg mixture to the dry ingredients and whisk until you have a smooth, lump-free batter. The batter will be quite stiff.

Place corn, capsicum, spring onions and herbs in a mixing bowl and add just enough batter to lightly bind them (about 3/4 cup). Heat 2 tablespoons vegetable oil in a non-stick frying pan on medium heat, then drop in 2 tablespoons of batter per fritter and cook 4 fritters at a time.

Cook for 2 minutes, or until the underside of each fritter is golden. Turn over and cook fritters on the other side. Transfer to a plate and keep warm while cooking the remaining fritters. To serve, place one fritter on each plate and top each with two halves of roast tomato, a small handful of rocket and a rasher of grilled bacon. Finish with a second fritter and drizzle olive oil around the base of the stack.

Serves 4.

Roast Tomatoes
4 ripe Roma tomatoes, sliced in half lengthways
4 tablespoons extra-virgin olive oil
sea salt
freshly ground black pepper

Preheat the oven to 180C. Place tomatoes on a baking tray, cut-side-up, and drizzle
with olive oil. Sprinkle liberally with sea salt and pepper. Roast in the oven for 40 minutes.

    Great recipe good for on the road in a caravan. Simple and tasty if you don’t have an oven you can use the griller which most caravan’s have for the tomatoes. they won’t take quite as long but you will get the desired result.
