As winter sets in the thick flannelette sheets reappear, slippers and dressing gowns make a comeback and warm hearty dishes replace cold salads and meats.
Whether you are making soup with leftovers from a roast, or starting from scratch, just about any ingredient can be combined to make a delicious soup. Mix leftover roast chicken with barley, carrots, parsnip, celery, potatoes and cauliflower to make a wonderfully chunky soup. Also, try Pea and Bacon Soup by using a few bacon rashers (or ham hocks), frozen peas and vegetable stock.
For those a little more adventurous, spice up your pumpkin soup recipe with a smidgen of laksa paste or a little curry powder and put some yoghurt in it to make it tart and creamy. Your favourite soup combinations will probably depend on what you’re used to, but don’t be scared to step outside the box and experiment with spices, nuts and coriander for example. And when the weather warms up again, attempt to make a cool soup such as Gazpacho or a chilled creamy artichoke soup.
