The Queensland-produced adult cordial is gaining a huge following and is the perfect ‘pick-me-up’ for summer drinks, of both the hard and soft variety. The cordial is Noosa Lime Co. founder Scott Ewington’s first product, and more Noosa Lime Co. products are currently under development. The working farm that supplies the raw ingredients is in the Noosa Hinterland hills of Pomona, just 20 minutes from the heart of Noosa. The farm, spread across 30 hectares, has more than 2500 lime trees. It doesn’t get much fresher than that. Currently, the lime cordial is available at the Noosa Farmers’ Markets in Noosaville each Sunday; Belmondos, Noosaville; and the Food by Cooking Company in Noosa Junction. Here’s what you can do with this cordial:
Poached Pears with Brie
Add equal parts Lime Cordial for Lime Lovers and water in a saucepan, bring to simmer. Peel desired quantity of pears and add to liquid. Simmer gently till just tender.Remove and cool slightly. A perfect accompaniment to a cheese plate.
