Planning, creating and enjoying meals around a fire can be a satisfying, wholesome and creative part of camping, especially when all campsite members get involved.

If sausages in bread are becoming your go-to camping meal, add some variety with a batch of root vegetables roasted on the campfire. Leftover vegetables can be added to the next day’s breakfast for a fried cook up, or thinly sliced on sandwiches.

Onions, potatoes, pumpkin (with the skin left on), parsnip, and sweet potatoes all add great texture and flavour to campfire meals. Corn on the cob roasted over an open fire can be a fun addition to outdoor meals.

Wrap washed vegetables completely in aluminium foil. Nestle the vegetables in hot coals, and gently cover them up with remaining coals. Cook for approximately 30 minutes, turning occasionally with tongs. You could also add rosemary springs, olive oil and garlic gloves to each foil packet for extra flavour. You can also cook vegetables in a pan covered with foil. Cast-iron skillets or pans are a great addition to your camping utensils. Keep an eye out for pans with an extra-long handle specifically designed to use on campfires.
