You might have noticed in cafes about town the brightly coloured boxes of T2 teas.
T2 offers Australia’s largest range of beautiful, fragrant teas from around the world. Award-winning stores at selected locations on the East Coast provide a lush retail experience unlike any other. There’s no point buying great tea if you’re not going to brew it properly. According to T2, the best way to brew is the method that makes the tastiest cup of tea in your opinion. Here are some helpful tips to guide you to the perfect brew.

Step 1: Spoon the leaves into a warm pot or infuser. Pour hot water straight off the boil into the pot for black teas. For green teas, use water that has not reached boiling point. If it has, leave the water to cool for 2–3 minutes (using hot water can scald the leaves, resulting in a bitter flavour). If you’re using an infuser and a teacup, pour the water first then lower the infuser into the cup.

Step 2:
Steep for 2–5 minutes. This time depends on the length of the leaf – the shorter the leaf, the shorter the brewing time. Stir the leaves occasionally to ensure a balanced release of flavour.

Step 3:
Strain the leaves, remove immediately and serve with an edible accompaniment.
